A new dining spot, Gable, has opened its doors inside the Hollywood Roosevelt Hotel, promising an experience that goes beyond a typical steakhouse. Located at 7000 Hollywood Blvd, the restaurant offers a distinctive culinary approach that includes an ambitious cocktail program and compelling appetizers and desserts.
Gable's cocktail menu has quickly garnered attention, described as one of the most exciting in Los Angeles. Offerings like a tahini-washed manhattan or a playful riff on pad thai demonstrate a commitment to innovative flavors. Highlights include the Mr. Fahrenheit, a savory concoction with Oaxacan gin, mezcal, fermented cantaloupe, bell pepper, and saffron, and the Shoots & Ladders, which combines mezcal, Oaxacan rum, charred corn, chilis, and tea for a sweeter profile.
The appetizer selection is equally compelling, setting a high standard early in the meal. Options include Castelvetrano olive tapenade and whipped goat cheese served with radicchio leaves. For those seeking cooler, savory intros, the menu features beef tartare with smoked bone marrow aioli and tuna crudo.
While the cocktails and starters received high praise, the main courses presented a mixed experience. A shareable Catalina pizza, rich with garlic, creme fraiche, and little neck clams, proved to be a satisfying choice. However, seared scallops, though impeccably prepared, were noted for a sauce richer than expected. A hanger steak, cooked to a perfect medium-rare pink, came with a sauce choron that felt underwhelming. Yet, the side dishes, such as the broccoli-cheddar pomme dauphine, a combination of potato and comfort soup flavor, often stood out.
The dining experience concluded on a high note with desserts, which proved to be another area where Gable excels. With recommendations from server Bryce, two decadent options were chosen: the chevre basque cheesecake and the banoffe tart. The basque cheesecake, made with goat cheese, offered a silky texture and was complemented by a raspberry lavender compote. The banoffe tart was described as tasting like a pie version of banana pudding, deemed a perfect dessert.
Gable is open Tuesday through Thursday from 5 PM to 9:30 PM, and Saturday and Sunday from 5 PM to 10 PM. With its creative approach to cocktails and impressive desserts, the restaurant aims to uphold the legacy of its namesake, Clark Gable, a former resident of the Hollywood Roosevelt, by becoming a notable presence in Hollywood's dining scene.
